Menu Plans

My dietitian, Nga Hong Brereton, with the assistance of another dietitian, Keena Andrews, has devised six days' worth of complete menu plans for the very-low-protein diet, which you can modify to suit your tastes.

Each menu consists of approximately 20 g protein and 2,200 calories. This is an average caloric requirement for a 70 kg (154 lb) male whose physical activity is also average—for example, a student who walks back and forth to classes. Most of these calories are used for basal metabolism (about 1,400); physical activity uses another 500, and the remainder is used in assimilating food. But many factors modify energy requirements: age, sex, body size and composition, genetic factors, energy intake, growth, pregnancy and lactation, coexisting pathological conditions, and ambient temperature. For a full presentation of caloric requirements, see Recommended Dietary Allowances, published by the National Academy Press. Note that supplemental amino acids are part of each meal.
